Sourdough Bread Machine Recipe

A good way to bake a delicate bread with an intense aroma is to bake using sour dough instead of yeast. The difference in the taste is remarkable.

However, it can be hard to find a decent sourdough bread machine recipe as most bread machine recipes tend to use dry yeast.

I’ve experimented a lot with sourdough both using bread machines and ovens. This is the best recipe I’ve come up with so far.

I always keep a sourdough in the fridge and the trick for this sourdough bread machine recipe is to use a dry sourdough. Drying your sourdough also enables you to keep it fresh in your fridge for a lot longer.

What is a sourdough?

A sourdough is an old dough theoretically speaking. This dough contains microorganisms that give the dough a sour aroma. This means that the dough has a very low pH value, which allows you to store the dough for a very long time.

The microorganisms that are present in the sourdough is a mixture of milk acid bacteria and active yeast that occurs naturally in the grains. These microorganisms enables the bread to rise and gives the bread an incredible flavor.

We’ll start with the recipe for the sourdough before moving on to the sourdough bread machine recipe.

Sourdough recipe:

Ingredients:

  • Approximately ½ cup of rye flour
  • ½ cup of water (room temperature)

Day 1:

Mix 1/3 of the flour with 1/3 of the water in a bowl. Stir well. Cover and leave at room temperature for 24 hours.

Day 2:

Add another 1/3 of the flour and 1/3 of the water to the same bowl as yesterday. Stir it all well together. Cover and leave for another 24 hours.

Day 3:

Add the rest of the flour and water and stir well. Cover and leave for another 24 hours.

The sourdough develops at optimally at 77-86 degrees Fahrenheit. The finished sourdough will have a slightly sour smell and a slight layer of foam will develop on top. It will also rise in size.

This sourdough can be left in the fridge for up to 7 days. To store longer turn it into a dry sourdough by adding enough rye flour so that it turns into dry sprinkles. This way you can store it in the fridge for up to 8 weeks. flour-1528338_640

 Sourdough Bread Machine Recipe

  • 1.5 cups of water
  • 1½ tbsp butter
  • 0.5 cups of dry sourdough
  • 3 tsp salt
  • 2 tsp sugar
  • 1.5 cups of white flour
  • 1 cup of rye flour

Bake on the relevant programme. Using rye flour can be tricky for an inexperienced baker as it draws a lot more water than wheat. Therefore, it is a good idea to keep an eye on the dough during the mixing and rising process to make sure that it has the right texture. Add more water if necessary.

The sourdough can naturally also be tricky as the breads ability to rise depends on the culture of the sourdough. You can add 1 tsp of dry yeast to help the rising process until you are very familiar with your sourdough.

Easy Bread Machine Recipe

If you are looking for an easy bread machine recipe then this is the recipe to go for. It hardly gets any easier than this. For a lovely soft white machine bread you can simply use white wheat flour. Otherwise you can add a bit of whole wheat if you want.

Simply add the ingredients with the liquid at the bottom. Start your baking machine on the basic white bread program.

Notice that this easy bread machine recipe gives a really soft bread. It can be a bit difficult to cut without breaking when it’s still warm. So let it cool off before you cut it into slices.

  • 3 tbsp vegetable oil
  • ½ cup of water
  • ½ cup of milk
  • 2 cups of wheat flour
  • 1 tsp salt
  • 1 tsp sugar

Bread Machine Banana Bread

There is hardly anything better than a freshly baked banana bread. Luckily, it is very easy to make bread machine banana bread so you don’t have to think twice before starting such a delicious treat.

It is important to remember adding the ingredients in the right order; wet at the bottom, dry at the top.

Ingredients for bread machine banana bread:

  • 1/4 cup buttermilk
  • 1/4 cup butter or vegetable oil
  • 1 large egg, beaten
  • 3/4 cup mashed, ripe banana
  • 1/2 teaspoon vanilla extract
  • 2/3 cup sugar
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  •  1/2 cup chopped nuts (optional)

Add all the ingredients in your bread maker, except the nuts. Select the batter/cake program and press start. When ready, add the nuts.

When the machine is finished, let the bread cool off for 10 minutes before removing it from the baking pan.

How to make bread machine pizza dough

You can easily make an excellent pizza dough in your bread maker. It’s actually one of the easiest ways to whip up a quick pizza as it saves you the effort of having the hands in the dough.

When you make bread machine pizza dough it is important to remember the right order of the ingredients so you start by adding the wet ingredients. After that the bread machine takes care of the rest. When you hear the machine beeping – then you know its time for you to take over and finish up a delicious pizza.

Ingredients for bread machine pizza dough:

  • 1 cup of lukewarm water
  • 1 tbsp olive oil
  • 3 cups of all-purpose flour (or 1 cup durum wheat and 2 cups all-purpose)
  • 1 tsp salt
  • 1½ tsp dry yeast

Add the ingredients in the listed order. Start the bread machine on the dough program.

When the dough cycle is finished you remove the dough from the pan and it is ready for your favorite toppings.

This bread machine pizza dough gives an approximately 16-inch round pizza. It should be baked for 20-25 minutes at 475 F.

 

Gluten Free Bread Machine Recipe

If you have adopted a gluten free diet, you will probably be missing bread every now and then. Using a gluten free bread machine recipe will allow you to enjoy nice, healthy, homemade bread that tastes great.

There can be different reasons for avoiding gluten in your daily diet. A gluten free diet has long been necessary for people suffering from celiac disease but today’s health awareness has proved that many people suffer from gluten sensitivity or intolerance which leads them to feel better when avoiding gluten.

Gluten free bread is still kind of a rarity and can be costly and not always a culinary experience. Baking your own gluten free bread is a good option as it allows you to control the ingredients.

However, it is not always an easy task. Bread without gluten is less fluffy as it is the gluten that makes the bread rise and become airy. So you need to use a proper substitute for gluten when you bake gluten free bread. Adding a sort of starch and/or fibre is a good idea as it adds texture to the bread, and gives it a slightly fluffy feeling. You can use gluten free baking mixed flour, gluten free all-purpose flour, or you can blend your own blend.

You also need to make sure that your bread maker has a program for gluten free bread. You need to be able to adjust the rising time and the baking time accordingly. A non-stick baking pan is to prefer as the batter is different when the dough doesn’t contain gluten.

Gluten free bread machine recipe

Wet ingredients:

  • 3 eggs
  • 1/4 cup olive oil (or another type of high-quality cooking oil)
  • 1½ cup of milk
  • 1/4 cup of honey
  • 1 tsp of vinegar

Dry ingredients:

  • 2½ cups of rice flour
  • ½ cup of buckwheat or corn flour
  • 2/3 cups of starch (corn, potato or both)
  • 1 tbsp of dry yeast
  • 1 tsp salt
  • 1 tbsp xanthan gum

Ensure that the milk has room temperature. Add all the ingredients to the bread maker, ensuring that all the wet ingredients are at the bottom.

Start the bread maker on the gluten free program.

After few minutes of kneading you need to check if the texture is right, and perhaps adjust with more flour or liquid.

Bake and enjoy. Let it cool off before slicing.
